Let's just assume that if they are going to have AI controlled fighters, they will make ones specific for AI without an ejection seat, human interfaces, life support, and the need to limit G.

You should watch the video done by "Mover" above, (post 11) he points out some advantages that the AI had, that they may not have in real life situation

While the AI jet wont be needing things needed for a pilot my question was about the extent to which an AI could go while in an actual aircraft before it starts malfunctioning/break ?.

dependent on an unknown aircraft which I am sure will have limits on G, where those are at, who knows, it will be cost benefit analysis.

Another angle that probably hasn't been brought up, this was solely based on a gun fight, hence a lot of high G maneuvers, will an AI fighter even have a gun? Will they add the weight and space constraints to an AI fighter, or only equip it with missiles? In general a gunfight only happens when the missiles fail, then you have the gun for the really close knife fight, but AI will be somewhat expendable, so will they even put it in the fighter.
